Lupin Beans Burgers

Ingredients for 4 servings:

  • 250 g Lupin Beans
  • 200 g fresh Spinach
  • 1 Onion
  • 1 Carrot
  • Turmeric
  • Paprika
  • Curry
  • Salt
  • Extra virgin olive oil
  • Parsley
  • 4 tablespoons Breadcrumbs


Soak lupin beans in water for at least 12 hours. Drain, rinse and leave them in a bowl with water and 1 tablespoon of salt for 4-5 days, changing the water several times a day, in order to eliminate the bitter taste.

After that, clean the lupin beans removing the peel. Wash the spinach and blanch for 5 minutes, drain and keep aside. Put lupin beans, squeezed spinach, chopped carrot and onion, parsley, spices and salt in a food processor: mince the ingredients, then add breadcrumbs a little at a time, until the mixture is solid. Shape the burgers and coat them in breadcrumbs on each side. Cook the burgers in a pan with a little olive oil and serve with yogurt dip and spices.
