Navy Beans Hummus

Ingredients for 4 servings:

  • 100 gr Navy Beans 
  • 2 tablespoon Tahini
  • 2 tablespoon Extra virgin olive oil
  • Juice of 1 Lemon
  • Salt
  • Pepper
  • Hot paprika


Wash the Navy Beans and cook in water for about 90 minutes or until soften up. Drain, saving a cup of cooking water, and let cool.
Put the Navy Beans into a mixer or a hand blender beaker, add all the other ingredients and blend for  about 1 minute to obtain a smooth cream. If it results too dry, add some cooking water.
Pour the hummus in a bowl, sprinkle the paprika and a drizzle of olive oil.Excellent on toast or as dip for crudités.
